  2. On a greased baking sheet, arrange the carrots and onion in a single layer .
  3. Slice the top off a head of garlic; discard it and place the full head of garlic on the tray along with the carrots and onions.
  4. Drizzle 2 tablespoons of olive oil over the vegetables;this is the moment to spice the recipe up and season with the rosemary, salt and pepper.
  5. Put the chicken thighs on top of the veggies. Rub each thigh with some olive oil, add salt and pepper.

  1. Remove the stem of the Portobello mushrooms, rinse them with the smallest amount of water and dry.
  2. Mix the harrisa, 1 1/2 tablespoons olive oil, cumin, and onion powder in a bowl. Brush each mushroom with the harissa marinade, making sure to cover the edges of the mushroom as well. Let mushroom soak up in the mixture for 15 minutes.
  3. For the guacamole: Scoop out the flesh of the avocados, then mash them and mix in chopped tomatoes, red onion, lemon (or lime) juice, salt, and cilantro. Set aside.
  4. Rinse collard greens. Chop off the tough stems and set aside.
